1 cup soft breadcrumbs
1/2 cup applesauce
2 tbsp chopped onion (I always put in WAY more onion!)
1 tsp dried celery flakes
1 tsp Dijon mustard (any prepared mustard works)
1 slightly beaten egg
1 lb. ground beef
Filling: 1/2 cup applesauce
1 tbsp brown sugar
1 tbsp vinegar
1 tsp Dijon mustard
Combine bread and applesauce. Blend in rest of ingredients. Shape in loaf in pan with trench depression running length of top. Combine filling ingredients and pour into trench. Bake uncovered at 350F for one hour.
And, while I'm doing this anyway ...
Barley Banana Bread
1/2 cup butter or margarine
1 cup granulated sugar (I use brown or demara sugar instead)
1 cup mashed ripe bananas (about 3 medium-sized bananas)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups barley flour (whole wheat flour can be substituted, but the bread will be drier)
1/2 cup chopped walnuts (optional ... mini-chocolate chips also go nicely in this bread)
Cream butter and sugar together. Beat in eggs one at a time until smooth. Add mashed bananas. Add other ingredients in order given. Pour into 9x5x3 greased pan and bake at 350F for one hour. Let cool on rack for ten minutes, remove from pan. Let cool and wrap.
(For a bit of decadence, sprinkle a small amount of brown sugar on top of batter before baking ... melts into a hint of toffee topping)
