Adding to the recipes ...

While looking for the brownie recipe that I mentioned in response to Allison's post, I also came across a recipe for Nanaimo bars. Semmie can tell you all about how addictive this Canadian delicacy can be ... ***wicked grin in the direction of "Smallville"***

Nanaimo Bars

First layer:

1/2 cup butter
1/4 cup white sugar
5 tbsp. cocoa
1 egg
1 tsp. vanilla
1 2/3 cups graham wafer crumbs
1 cup flaked coconut
1/2 cup chopped walnuts

In saucepan combine butter, sugar, cocoa, egg, and vanilla. Cook over medium heat, stirring constantly until smooth and slightly thickened. Blend in graham wafer crumbs, coconut and walnuts. Press into bottom of greased 9 inch square pan.

Second layer:

1/4 cup butter
2 cups icing sugar
1 egg

Cream butter, gradually adding half the icing sugar, then the egg, then the remaining icing sugar. Spread over chocolate/crumb mixture. Chill until firm.

Third layer:

3 unsweetened chocolate squares (OR 3 tbps. cocoa + 1 tbsp. shortening)
1 tbsp. butter

Melt butter and chocolate and spread over top of second layer. Chill until set.
